Terra | The Vineyard Table

The Concept

Portuguese table, seasoned by the world.

Terra sits at the heart of Quinta da Boa Esperança, but the kitchen doesn't stop at the vineyard gate. The cooking here is contemporary and unmistakably Portuguese at its core, shaped by our chef whose path has run through kitchens well beyond this estate. Every dish carries something of that journey: technique picked up elsewhere, brought home and put to work on Portuguese ingredients and Portuguese instincts.

Nothing on the table is decoration. Each plate is built to be remembered — not for how it photographs, but for how it tastes.

“Contemporary cooking, inspired by the vineyard but above all by the path I've travelled — a journey that carries every place I've worked in. The focus is on Portuguese cooking, but interpreted in my own way. I cook what makes sense to me and, above all, I make sure every flavour leaves a lasting impression.”

— Chef Francisco

On the Plate

What that means, plate by plate

The menu moves with the seasons and draws where it can from the estate's own garden and the vineyard's surroundings, alongside ingredients sourced from producers across Portugal.

The Setting

At the table, in the vines

The wine list draws directly on the estate's own production — 13 of the property's 20 hectares are under vine — alongside a curated selection from across the Lisbon Wine Region. Pairings are available by the glass or the bottle, and the cellar is open to guests who want to see where the wine in front of them actually comes from.
